One of my favorite style of ethnic foods is Asian. I'm a big fan of any type of recipe that uses wontons in a different way. This recipe from BHG I'm definitely going to have to try.
(Chicken)
Ingredients
1/4 teaspoon salt
1/4 teaspoon ground coriander
1/8 teaspoon black pepper
12 ounces chicken breast tenderloins
4 cups mixed spring salad greens
1 medium mango, halved, seeded, peeled, and chopped
3/4 cup fresh sugar snap peas, trimmed
3/4 cup purchased shredded carrots
1 medium red sweet pepper, cut into thin bite-size strips
1/2 medium cucumber, halved lengthwise, seeded, and thinly sliced crosswise
1/4 medium red onion, very thinly sliced
1 recipe Sesame Wontons
1 recipe Sesame Dressing or purchased Asian vinaigrette
1/4 cup chopped, roasted macadamia nuts
Thin strips green onion tops (optional)
Directions
In a bowl combine salt, coriander, and black pepper. Sprinkle evenly over chicken tenderloins. Grill chicken, covered, over medium heat 6 to 8 minutes or until chicken is no longer pink, turning once.
In a large bowl toss together the next seven ingredients (through red onion). Chop the grilled chicken and add to salad mixture; toss to combine.
Divide salad among four plates. Top each with two of the Sesame Wontons. Drizzle salad with Sesame Dressing and sprinkle with nuts and, if desired, green onion tops.
(Sesame Wontons)
Ingredients
1 egg white, lightly beaten
1 teaspoon canola oil
8 wonton wrappers
2 teaspoons white and/or black sesame seeds
Directions
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. In a bowl whisk together egg white and oil; brush on both sides of wonton wrappers. Lay wrappers in a single layer on prepared baking sheet. Sprinkle evenly with sesame seeds. Bake 7 to 9 minutes or until wontons are evenly browned and crisp (wontons will become cripser as they cool).
(Sesame Dressing)
Ingredients
2/3 cup bottled light balsamic vinaigrette
2 tablespoons rice vinegar
1 teaspoon sugar
1/2 teaspoon sesame oil
Directions
In a bowl whisk together all ingredients.
