Chicken Mango Salad with Sesame Wontons
One of my favorite style of ethnic foods is Asian. I'm a big fan of any type of recipe that uses wontons in a different way. This recipe from BHG I'm definitely going to have to try.
(Chicken)
Ingredients
1/4 teaspoon salt
1/4 teaspoon ground coriander
1/8 teaspoon black pepper
12 ounces chicken breast tenderloins
4 cups mixed spring salad greens
1 medium mango, halved, seeded, peeled, and chopped
3/4 cup fresh sugar snap peas, trimmed
3/4 cup purchased shredded carrots
1 medium red sweet pepper, cut into thin bite-size strips
1/2 medium cucumber, halved lengthwise, seeded, and thinly sliced crosswise
1/4 medium red onion, very thinly sliced
1 recipe Sesame Wontons
1 recipe Sesame Dressing or purchased Asian vinaigrette
1/4 cup chopped, roasted macadamia nuts
Thin strips green onion tops (optional)
Directions
In a bowl combine salt, coriander, and black pepper. Sprinkle evenly over chicken tenderloins. Grill chicken, covered, over medium heat 6 to 8 minutes or until chicken is no longer pink, turning once.
In a large bowl toss together the next seven ingredients (through red onion). Chop the grilled chicken and add to salad mixture; toss to combine.
Divide salad among four plates. Top each with two of the Sesame Wontons. Drizzle salad with Sesame Dressing and sprinkle with nuts and, if desired, green onion tops.
(Sesame Wontons)
Ingredients
1 egg white, lightly beaten
1 teaspoon canola oil
8 wonton wrappers
2 teaspoons white and/or black sesame seeds
Directions
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. In a bowl whisk together egg white and oil; brush on both sides of wonton wrappers. Lay wrappers in a single layer on prepared baking sheet. Sprinkle evenly with sesame seeds. Bake 7 to 9 minutes or until wontons are evenly browned and crisp (wontons will become cripser as they cool).
(Sesame Dressing)
Ingredients
2/3 cup bottled light balsamic vinaigrette
2 tablespoons rice vinegar
1 teaspoon sugar
1/2 teaspoon sesame oil
Directions
In a bowl whisk together all ingredients.

Let every man be slow to speak, slow to anger - James 1:19
I find sometimes with certain people (usually people I truly care about)this is such a challenge for me. When I speak slower sometimes people take it as me being defensive or speaking to them in a tone that not very positive. When both could be further from the truth.
I'm at a place in my life now where I simply do not want anger or drama as a part of my life.
The best thing I feel that I can do at this moment is pray. Pray for myself and others.
Pop Sugar Fitness does it again. What great suggestions to assist you in becoming instantly happy. With so much going on in our lives sometimes we need a little reminder of the simple things.
Pop Sugar Suggestion #1
JT Thinks
- Play a game (not on your phone): Get your family together, invite some friends over, and have a game night. Not only will you be surrounded by good company, but friendly competition usually guarantees a good time and a good laugh.
What a great suggestion, I remember my ex, my daughter and I playing games and how much fun we had with just the three of us. I remember one year we brought the New Year in playing Farkle and a few other games and eating all kinds of treats. One of the best New Years I think I've had. Find a board game and bring all the members of your family together and enjoy a good round of Monopoly, Life, or whatever game you may have.
I don't like everything Vintage but to me this is so adorable and the cost is fairly reasonable.
